Butternut Squash Bacon Bites

These gluten-free and refined sugar-free Butternut Squash Bacon Bites are a delicious and fun appetizer.

What are the ingredients to make these Butternut Squash Bacon Bites?

  1. Roasted butternut squash
    You can use fresh butternut squash or get those packages in the produce section of precut and cleaned butternut squash. You could also use frozen butternut squash that is thawed out in this recipe.
  2. Onion finely chopped
    Fresh onion is a must for this. You could even use the precut onion sold in the produce section. But please do not use onion powder.
  3. Salt
  4. Pepper
  5. Smoked paprika
    This adds such a delightful smoky flavor to these Butternut Squash Bacon Bites.
  6. Fresh garlic
    As with the fresh onion, fresh garlic is a must. You could use the precut/diced garlic that’s sold in the produce section of most stores.
  7. Bacon
    Cook the bacon until crispy and crumble it up to use in this recipe.
  8. Fresh parsley chopped up
    If you prefer, you could use rosemary or even cilantro for a flavor spin.
  9. Almond meal
    This is the binding agent. Use less or more, depending on how you prefer the consistency of these bites to be.

Tips when making this dish:

  • Cut a butternut squash, and roast the butternut squash for 40 minutes at 375 degrees with the cut side face down on a silpat lined baking tray. Then, when it is baked, use a fork and scrape out the insides.
  • Cook the bacon before using it in this recipe.

When my daughter was younger, she would talk like me, dress like me, eat like me, even watch and like the same cartoons I did. But, then, as children have this annoying habit of doing…she started growing up… and changing!

Now, she says dance instead of dahnce, adopts yoga pants instead of jeans, prefers pasta over chocolate, and would rather binge watch Extreme Vacation Homes instead of Pinky and the Brain! The Nerve!

I kid… I kid…

Seriously though, when it comes to the FEAST-ivities of the Holiday season, we are a family divided.

Which, could actually work out well if you think about it. Can you imagine having that whole pumpkin pie to yourself?

Heck – imagination becomes reality if no-one else likes pumpkin pie – right?

My daughter loves pecan pie, but no-one else does, so she gets to enjoy her pie for days without ever having to worry about someone else eating that last slice!

Like she pointed out the other night, “mom, just cos we have different likes doesn’t mean we cannot get-together and be twice as joyful.” And just as I was thinking “out of the mouths of babes” … she had to add in “…and twice the treats this Thanksgiving and Christmas cos I don’t like to share!”

Speaking of Thanksgiving and Christmas – when the Holiday season comes along, I try my best to have eats like these chorizo bites, treats like these mincemeat pies and a variety of drinks to cater to everyone’s preferences.

Butternut Squash Bacon Bites

There is joy-in-not-sharing pecan pie for my daughter, apple pie for my sister and a sugar free cashew cake for my mom at the dessert table.

And, at the drink table, there are bottles of Coca-Cola for my sister and daughter, Diet Coca-Cola for my mom and Coke Zero for me.

And, speaking of sharing, these Butternut Squash Bacon Bites are one appetizer we could all agree on. They are totally flour-less and refined sugar free. And super easy to make.

Onions, garlic, smoked paprika and bacon mingle together with the roasted butternut squash, infusing these bites with tons of flavor! And – they pair oh so well with a refreshing, cold glass of Coca-Cola.

These Butternut Squash Bacon Bites are gluten-free and would make a healthy appetizer or side for your holiday Feastivities!

Ingredients

  • 1 cup roasted butternut squash I roasted mine at 375 for 40 minutes and using a fork, scraped out the insides
  • 1/2 red onion finely chopped
  • 1/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon smoked paprika
  • 2-3 cloves garlic according to your preferences
  • 2 pieces cooked bacon
  • 1 teaspoon parsely chopped up
  • 3 tablespoons almond meal

Instructions

  • Preheat your oven to 400 degrees
  • Add butternut squash, red onion, garlic, salt, pepper, smoked paprika, parsely and bacon to a bowl and, using a spoon, mix ingredients till well mingled
  • Add in the almond meal and mix well
  • Then, using your hands, roll into bites sized balls/bites
  • Place on a parchment lined and sprayed baking sheet and bake for 30-35 minutes.

    What is the green leafy ingredient? How much do I use?
    Cilantro? Parsley?
    I do not see anything green and leafy in the list of ingredients.

        Hi Mary Kay – so sorry for the delay in replying – yes – it sure can – you could use ground up quick oats or regular all purpose flour.             Lol – yes – cilantro would work great! I actually made these with cilantro too the first time and preferred it with it – a friend of mine doesn’t like cilantro thats why I made this batch with parsley

            Hey Mary Kay, I haven’t tried cornmeal so I couldn’t vouch for it but it might work. Btw, you could get by without the parsley – I got back from the store a little while ago and it was hectic in there – don’t blame you for not wanting to go. I’m not sure what “country” is?

    Is the sauce in the picture? And do they reheat well? Are they good cold? I need to bring an appetizer but have to travel for 45 minutes to get there.

      Hey Ann, that sauce is plain old sambal oelek. Yes, they do store and reheat well – I just popped leftovers in the oven (350) for about 10-12 minutes the next day – made them a bit more firm too. Thanks so much for stopping by and commenting.   32. Sometimes it totally is a good thing that we like different foods. Take wings, for instance, hubby likes the ‘drum’ part and I like the ‘wing’ part so when we have wings, it works out perfectly for us 🙂 Your daughter sounds like a sweetheart! ‘Twice as joyful’ – how nice is that?
