Chocolate Dipped Sesame Almond Breakfast Cookies

Chocolate Dipped Sesame Almond Breakfast Cookies

This past Friday afternoon the parking lot at my neighborhood grocery store looked like a mall parking lot on Black Friday! You see, the weather forecast had 2-6 inches of snow on the horizon and Atlanta businesses and schools closed at noon with people heading to grocery stores to stockpile groceries and hunker down for the rest of the day. However, my daughter suggested we make other plans! Deciding to challenge the forecast, we headed down to my mom’s place, (which is about a forty minute drive away) to hang out with my sister and her!

Now, I’ve gotta admit, after the craziness of Atlanta’s Snowmageddon 2014, I wasn’t feeling my daughter’s bravado. So, I made sure to sneak a few extra blankets into the back of my little SUV, along with some bottles of water and some of these Chocolate Dipped Sesame Almond Breakfast Cookies in case Snowmageddon 2017 decided to arrive as forecasted and derail our ride back home. Now, these Chocolate Dipped Sesame Almond Breakfast Cookies might be little, but, they sure are hearty!

Simply Sesame

When I received a package of Bonelli Fine Food, Inc.’s Simply Sesame Spreads, I figured I would use the Vanilla with Almond Bites Spread in a modified version of the peanut butter, flax and chocolate chip cookies that have been adorning our kitchen counter. I simply mixed almond meal, an egg, coconut sugar, almond extract, a pinch of salt, and, Simply Sesame’s Vanilla with Almond Bites Spread together in a bowl and baked it up. I decided to semi dip/pour chocolate over half of each of them and my daughter and sister said they tasted like they were “oh so naughty” more than they were “oh so healthy!”

Yes, we made it down to my mom’s, chatted with her and watched my sister munch on my cookies till almost dusk, and then headed back home. Nope, we didn’t collide with Snowmageddon 2017 that night – or, the next morning, for that matter. All that we had of the forecasted Snowmageddon 2017 was a dusting of the white stuff on our deck…hey, at least we were prepared – right?!

Chocolate Dipped Sesame Almond Breakfast Cookies

Chocolate Dipped Sesame Almond Breakfast Cookies

Yield: 8 cookies
Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes

These 6 ingredient Chocolate Dipped Sesame Almond Cookies are delicious to snack on and heart enough for a quick breakfast!

Ingredients

  • 3/4 cup almond meal
  • 1/4 cup Simply Sesame's Vanilla with Almond Bites Spread
  • 1 egg
  • 1/4 cup coconut sugar
  • 1/4 teaspoon almond extract
  • a pinch of salt
  • 1/2 cup good quality chocolate for melting

Instructions

  1. Preheat oven to 375
  2. Add the almond meal, coconut sugar, Simply Sesame's Vanilla with Almond Bites Spread, the egg, almond extract and salt to a bowl and mix well.
  3. Form into 8 balls, flatten slightly and bake for 15 minutes
  4. Remove from the oven and let cool a bit
  5. When cooled, melt the chocolate ( I simply zapped it in my microwave on 30 seconds intervals)
  6. Then, dip or spread chocolate onto half of each cookie - let cool so chocolate hardens and enjoy!

Why? How? This is just outrageous behavior, Shashi! Well, I'm not talking about you - I'm talking about myself. Because how could I miss these amazing cookies? Almond? Sesami? Coconut sugar (Like you used this cause it introduces such a lovely caramel flavor)? I know there's no hope that any cookies left, but if you're going to make another batch soon (like right now), please don't forget me:)

Ha! That story SO reminds me of here in the UK. Everyone goes crazy at the slightest mention of snow, and it usually turns out to be a tiny dusting!

The cookies truly look AMAZING, Shashi. They look like something you'd buy from a posh patisserie, and sound like my idea of heaven.

You are just way too kind! Thanks so much Helen! I so hope you do try these - if you can find Simply Sesame spread there, it ads quite a unique twist - but, if you cannot, plain old almond butter would work too.
