Lentil Cheese Burgers

“Comfort food” – those two words can conjure up thoughts of so many different belly-rumbling pleasures for each of us. This evening, a chap from a tree service company I have used in the past, came over to give me an estimate for cutting down and hauling away a very large -and dying- tree in my back yard.

When he realized I was a repeat customer, he dropped his advertised price down by a $100; and when we got around to talking about food; comfort food to be exact; he offered to drop his price down another $100 for some homemade biscuits for him and his crew!

Whether it be biscuits, or chicken pot pie or chicken and dumplings or pizza or mac and cheese, we each have that food that takes gets us reminiscing while making us feel all warm and fuzzy inside.

My comfort food these days is lentils. Growing up, lentil curry used to be a staple on our table no matter what the occasion or circumstance might have been. My mom has always been an expert lentil -or dhal- curry maker; to this day, I’ve never quite had lentil curry like she makes it!

While I adore lentil curry – I adore lentils more. To me, lentils are so incredibly versatile – easily absorbing the flavors of what they are surrounded by while adding a nutritional punch to whatever they are in, whether that be pancakes or soups or stews.

This past week has been kinda crazy and I have found solace in comforting lentils in a wide variety of ways; so, when I received a sample of creamy, dill flavored Castello Havarti cheese, I figured I would try combining it with lentils to make a veggie burger. I wasn’t sure how the cheese would hold up with the lentils – I was expecting it to melt and ooze out. As I kept things pretty simple – just lentils, cheese, spices, eggs and onion, I wasn’t sure if these little burgers would pass my daughter’s taste-test.

We love these lentil cheese burgers!

But, surprisingly, these little nibblers were super tasty (or they wouldn’t have made it on here) and, they were oh so comforting -and, no cheese oozed out in the process! My daughter came up with a perfectly complimenting sauce for these Lentil Cheese Burgers – a simple mix of yogurt, wasabi, ketchup and lime – sounds weird – but, it tasted so darn good with these burgers.

Ingredients

For the Burgers

  • 4 cups cooked lentils I boiled 2 cups red lentils in 4 cups water for 25 minutes
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 1/2 teaspoons paprika
  • 1/2 cup grated Dill Flavored Castello Haverti Cheese
  • 2 eggs
  • 1 small onion finely chopped

For the Sauce:

  • 1 tablespoon Greek yogurt
  • 1 teaspoon wasabi paste
  • 1 1/4 tablespoons ketchup
  • 2 teaspoons lemon juice

Instructions

For the burgers

  • Preheat oven to 375
  • Mix all the ingredients in a bowl till well incorporated
  • Coat a pan with olive oil and let heat up over a medium flame
  • Form lentil-cheese mixture into burgers
  • Cook on each side for 4 minutes -flipping gently
  • Transfer to a foil lined baking tray and bake at 375 for 15 minutes

For the Sauce:

  • Mix all the ingredients together and serve with warm Lentil & Cheese Burgers

      Hmmmm…no..don’t think you could fool anyone to think this wasn’t meat…then again, maybe if you blindfolded them and used extra sauce? (on the burger not on them) 🙂

  6. Your lentil burgers look and sound amazing! I really need to start cooking with lentils more. It’s so hard to find ways for my vegetarian daughter to get enough protein since she won’t go near anything with beans.

      Does your daughter eat tofu? and eggs? There are sometimes we do the vegetarian thing for a little while and I don’t know what I would do if I didn’t have beans!

      I know right?! Though from some of the other estimates I have been hearing – this was such an incredible deal! I felt so bad and made the guys a bunch of muffins AND biscuits – had a little buffet for laid out on the porch for them!

  12. You know what’s so sad?! I can’t even remember the last time I had lentils! I know… I really do love them, but they’re one of those foods that I didn’t grow up with so I constantly forget about.     I’m always looking for veggie burger recipes! Lentils are such a vegetarian staple and I can’t imagine life without them. (Yes, I know, it sounds like I’m talking about marriage… I’m practically married to lentils haha!) I can’t wait to give these lentil burgers a try.       Haha – actually Alice, they are coming out on Monday (he just gave me the estimate yesterday) and yup I plan on having some biscuits and muffins and cookies and juice ready for them. 🙂

      Duuude – guess what?! It was 71 degrees here on Sunday – and it’s been in the high 60’s and 70’s since – oh heck yeah – am ready for spring and a scorching summer! Thanks btw.

      Thanks Joanne – my mom makes this tempered lentil curry – it’s supposed to be eaten with naan or rice – but I love to eat it like soup – that’s one instant when I could eat a whole pan of lentils by themselves – if you are ever in Atlanta – I might share some of this curry with you… or maybe the next Leftovers club we are paired up….

      He must be my brother from another mother -and father! Dhal/daal (as many different ways to say it as there are ways to cook it) was my bread and butter growing up too – a new year party – there was dhal curry, birthday – dhal curry, funeral – dhal curry, Sunday morning – dhal curry, money is tight – dhal curry … you get it right…?
